Abstract

Circulating levels and tissue accumulation of advanced glyca-tion end products (AGEs) are strongly linked with metabolicimbalance and the progression of chronic diseases, includingcardiovascular disease (CVD). 1,2 Diet is the most importantexogenous source of AGEs contributing to the total body AGEsload. Experimental and clinical evidence suggests that thereduction in body AGE content, by dietary AGE restriction,could modulate different pathways involved in the pathophy-siology of CVD
